A delicious autumn cake with an unusual ingredient – coffee grounds

Did you know that used coffee grounds can be turned into a cake ingredient? It may sound unusual at first, but it really works. The idea comes from the team at a Parisian restaurant (Tout Day), who created an incredibly moist dessert using this unexpected ingredient.

Here’s what you’ll need:

  • 100 g whole hazelnuts
  • 100 g flour
  • 1 small cup of coffee grounds
  • 2 tsp ground coffee
  • 100 g melted butter
  • 100 g brown sugar
  • 2 eggs
  • 1 packet baking powder
  • A pinch of salt

Preparation:
Preheat the oven to 180°C and toast the hazelnuts for 10 minutes. Rub them with a cloth to remove the skins (if not already peeled) and chop them. Leave a few whole nuts for decoration if you like. Grind the hazelnut skins into a fine powder and set aside. In a bowl, whisk the eggs with the sugar until pale and fluffy.

Add the melted butter, coffee, coffee grounds, and ground hazelnut skins. Then add the flour, baking powder, a pinch of salt, and finally the chopped (or ground) hazelnuts. Pour the mixture into a buttered baking pan. Decorate the top with a few whole or broken hazelnuts. Bake for 30–40 minutes, depending on the pan size. Check if it’s done with the tip of a knife.
