- 8 slices of wholemeal sourdough bread
- 4 tablespoons homemade or store-bought pesto
- 4 slices fresh mozzarella, thinly sliced
- 200 g cooked chicken meat
- ½ cup roasted red peppers
- Olive oil
Preparation:
- Heat a large cast iron skillet over medium heat.
- Spread 4 slices of bread with 1 tablespoon of pesto each.
- Add even layers of mozzarella, chicken and roasted peppers.
- Add a little olive oil to the heated pan and bake the sandwiches (two at a time) for 3-4 minutes on each side, until the bread is crispy and the cheese is melted.
