Homemade Italian panini with chicken and pesto

Panini sandwiches became a hit in the late 90s, taking over the menus of Italian restaurants and urban cafes. They're often loaded with cheese and sauces, turning into a calorie bomb. But this chicken panini recipe offers a delicious bite with fewer calories, thanks to fresh mozzarella, homemade pesto, and lean chicken.

Recipe

Ingredients:

  • 8 slices of wholemeal sourdough bread
  • 4 tablespoons homemade or store-bought pesto
  • 4 slices fresh mozzarella, thinly sliced
  • 200 g cooked chicken meat
  • ½ cup roasted red peppers
  • Olive oil

Preparation:

  1. Heat a large cast iron skillet over medium heat.
  2. Spread 4 slices of bread with 1 tablespoon of pesto each.
  3. Add even layers of mozzarella, chicken and roasted peppers.
  4. Add a little olive oil to the heated pan and bake the sandwiches (two at a time) for 3-4 minutes on each side, until the bread is crispy and the cheese is melted.
  5. (Tip: For best results, press the sandwiches with a heavy pan.)
