Delicious and healthy breakfast – sandwich with egg, vegetables and turkey

We present you an idea on how to prepare a delicious, unconventional, homemade, healthy breakfast sandwich. This sandwich consists of eggs, fresh vegetables, turkey sausages and whole grain bread. The recipe is ideal for those who want to eat healthy without spending a lot of time in the kitchen. It is perfect for weekdays, but also for weekend breakfasts with the family. Here is how you can prepare this sandwich without much effort.

Ingredients

  • Bread: Use whole wheat buns for burgers. Alternatively, you can choose whole wheat muffins or even gluten-free buns.
  • Vegetables: This recipe uses onions, peppers, and kale. Feel free to replace or supplement them with other firm vegetables like Swiss chard, spinach, zucchini, broccoli, or mushrooms.
  • Sausages: We recommend turkey sausage or another protein option of your choice. Choose natural, organic, or unprocessed products for a healthier meal.
  • Cheese: This recipe uses smoked Gouda. You can substitute it with cheddar, Swiss, or another cheese that melts well. Avoid processed cheeses.
  • Eggs: 12 eggs are needed.

Preparation

  1. Vegetable processing: First, sauté the onion in a pan until it softens and turns golden. Then add the bell pepper and kale. Cooking the vegetables in olive or coconut oil adds rich flavor and healthy fats.
  2. Preparing the egg mixture: Beat the eggs with a little milk or water. Add baking powder to give the eggs a light and fluffy texture. Season with salt and pepper to taste.
  3. Baking: Prepare a baking pan (approximately 40 x 28 cm) and spray it with cooking oil. Pour in the egg, vegetable and sausage mixture, spreading it evenly. Bake at 190°C (375°F) for about 25 minutes.
  4. Cutting the eggs: Once the mixture is baked, let it cool for a few minutes. Then cut it into 12 equal squares using a flat spatula for easier removal.
  5. Assembling the sandwiches: Open each bun, put a piece of egg, add cheese and cover with the top part of the bun.

These sandwiches are ideal for making in advance. You can freeze them and reheat them as needed. Reheat them at 180°C for about 15 minutes to make them as good as freshly made.
