Ingredients:
1 head of lettuce
200 g chicken fillet (optional)
50 g parmesan
2 cups baguette, diced (for croutons)
2 tablespoons olive oil
Salt and pepper to taste
For dressing:
1 egg yolk
1 teaspoon mustard
1 clove of garlic
1 tablespoon lemon juice
½ teaspoon Worcestershire sauce
50 ml olive oil
30 g grated parmesan
Method of preparation:
Preheat the oven to 180°C. Cut the baguette into small cubes, sprinkle with olive oil, salt and pepper, and bake for 10-15 minutes until golden brown.
If you are adding chicken, roast it in a pan with a little oil, salt and pepper, then cut it into thin slices.
In a bowl, beat the egg yolk with the mustard, add the finely chopped garlic, then the lemon juice and Worcestershire sauce. Slowly add the olive oil while mixing, and finally stir in the Parmesan.
Chop the lettuce, add the croutons, chicken (if using) and slowly pour over the dressing.
Sprinkle with a little more grated Parmesan and enjoy the perfect homemade Caesar salad.
