Start your day with delicious protein-rich muffins

If you're looking for a breakfast that's a great source of protein and will give you energy throughout the day, these muffins are the right choice. Easy to prepare and full of flavor, they're great for enjoying at home, with family, or taking to work.

Ingredients:

6 slices of bacon
10 large eggs
1 2/3 cups flour + a little for sprinkling
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon black pepper
A pinch of sugar
1/2 cup vegetable oil
1/2 cup fat-free Greek yogurt
4 slices cheese (about 1 cup), grated
1/4 cup Parmesan cheese (about 1 1/2 ounces)
4 spring onions, thinly sliced
Flaked sea salt and hot sauce, for serving

Preparation:

  1. Fry the bacon.
    In a large skillet, fry the bacon over medium heat until crispy (about 8 minutes). Drain on paper towels, then finely chop.
  2. Prepare the eggs.
    Boil 6 eggs in boiling water for exactly 5 minutes, then immediately transfer them to a bowl of cold water and ice. After 15 minutes, carefully peel them.
  3. Prepare the dough
    Preheat the oven to 220°C and grease a 6-cup muffin tin with butter. In a bowl, mix the flour, baking powder, salt, baking soda, black pepper and sugar. In another bowl, beat the remaining 4 eggs with the oil and yoghurt. Add the dry mixture and mix lightly, then stir in the grated cheese, Parmesan, spring onion and bacon.
  4. Assembling the muffins
    Place a little batter in each muffin tin to hold the eggs. Dip the eggs in flour, place one in each tin and cover with the remaining batter. Smooth the tops.
  5. Bake.
    Bake for 15 minutes, until golden brown. Let cool for 5 minutes, then carefully remove from the pan.

The combination of these ingredients creates a meal that is rich in protein, calcium, and vital vitamins and minerals, while also providing necessary carbohydrates for energy.
