Nutritious and delicious – crispy zucchini with parmesan

Recipe for crispy zucchini burgers

Ingredients:

  • 2 medium zucchini, grated
  • 1 teaspoon salt
  • 1/4 cup flour (or almond flour for a healthier option)
  • 1/4 cup grated parmesan cheese
  • 1 egg, beaten
  • 2 spring onions, finely chopped
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper (optional)
  • Olive oil for frying

 

Method of preparation:

  1. Preparation of zucchini
    • Grate the zucchini and place them in a colander.
    • Salt them and leave them for 10 minutes to release liquid.
    • Drain them well with a kitchen towel or paper to remove as much excess water as possible.
  2. Making the mixture
    • In a bowl, combine the drained zucchini, flour, Parmesan, egg, spring onion, garlic, pepper, and red pepper.
    • Mix until you get a compact mixture.
  3. Frying
    • Heat a little olive oil in a pan over medium heat.
    • Take a spoonful of the mixture and form small patties.
    • Fry them for 3-4 minutes on each side until they get a golden and crispy crust.
  4. Serving
    • Leave them briefly on a paper towel to absorb excess oil.
    • Serve them warm with yogurt, sour cream or your favorite sauce.
